SHERRY’S RIVER BOTTOM PORK RUB

This Rub is GREAT on any Pork. No other Salt or Spices needed to make your
Ribs, Roast and Chops FINGER LICKING GOOD!!!

PORK RIBS ON THE GRILL

Picking out your ribs at the market. An easy way to know if the ribs are full of fat is to fold over the package at the middle. If it folds over easily, it is fairly lean, as when fat is cold it is hard.

Remove ribs from package. Run under cold water quickly to remove film that is on the ribs. Pat dry with paper towels. Cut off any excess fat. Pour some extra virgin olive oil over top and bottom and massage to distribute oil over the ribs. Put a good layer of the Pork Rub all over the ribs, pat in. Let the Pork Ribs sit out on the counter at room temperature for 20 to 30 minutes.

You will need a hot grill, with the coals close to the grill rack. Put charcoal only on one side of the grill. Sear your ribs on both sides leaving nice grill marks, but be careful not to burn your spices. After searing, move your ribs off of the coals.

Cooking tender and juicy Ribs takes time. It will take about 3 to 4 hours, basting the ribs about every 30 minutes.

Basting Mixture: One cup of extra virgin olive oil and four heaping tablespoons of Sherry’s River Bottom Pork Rub. Mix together. Use a High Heat Brush for basting.

Optional: After ribs are cooked put them in aluminum foil and brush with honey. Let them sit in indirect heat for one hour.

After your ribs are done put on a clean platter. Set ribs on counter top.

DO NOT CUT RIBS FOR 5 to 10 MINUTES
This allows the juice to redistribute throughout the meat
